Nutty Moroccan Carrots
3-4 large carrots, peeled, cut into 3-inch long pieces, halve and quarter each piece into sticks
1 tbsp. olive oil
¾ tsp. salt
3 tbsp. honey
¼ cup golden raisins
¼ cup chopped walnuts, toasted
2 tbsp. chopped fresh mint
1 tsp. fresh lemon juice
6 C Magic Chef Microwave Cookware
Pour in enough water to cover the bottom of the glass dish, approximately 1/8” deep. Place carrots into microwave cookware. Toss carrots with olive oil and salt. Secure lid and open vent.
Microwave on high power for 4-5 minutes, or until carrots are tender.
Transfer carrots to serving bowl, drizzle honey over hot carrots and toss to coat.
Combine raisin, walnuts, mint and lemon juice. Sprinkle over carrots and serve.
